    Love your recipes. I've noticed that you generally (or always) use a 12" skillet. Is there a formula to reduce the recipe portions to use in a smaller skillet (a 10 1/4" one)?

    is it normal for my rendered brisket tallow to smell funky when hard and then I use it and it makes great steak fries and other stuff?….it's stored in the refrigerator since I rendered it. ….I think I may have cooked it a little bit hard when rendering.

    I discovered this style of potatoes a few years ago and my family loves them. My daughter is vegetarian so I have to use vegetable broth instead, but the chicken stock adds so much more flavor. I usually add a bottle of beer after the potatoes are done and make a gravy. Think I will have to make these with some lamb chops for dinner Sunday))
