Personally, I like my steak medium rare. Pink on the inside. Not red, not gray. When I'm cooking for guests at my house I tell them "I make steak medium rare. I won't cook it more than that. If you want it medium or well done, then…have the chicken instead.

why don't you guys ever cook below rare, We love your recipes but you only cook to rare or medium rare.
