    We used to have Save-A-Lot grocery stores that had cheap vegetables for Mexican dishes, so I’d get something slightly hotter than bell peppers. No longer! Local stores shut down!

    Any time you have smoked sausage with beans, you know it's going to be a hit. I've gone to cutting up the smoked sausage and cooking it in the air fryer instead of in a pan when I need smoked sausage. It gets much more crispy and the fat still clings to the sausage and doesn't really go to the bottom of the air fryer.

    I went to buy a can of corn for my after Thanksgiving Turkey chowder and it was $1.98 for a brand name. Even Great Value was $1.50. Just an example of food prices, and I’m not even in a metro area.

    I make this with hamburger meat. I put black beans, onion, bell peppers, corn, canned tomatoes and a bag of rice. I then put taco seasoning in it. It feeds us (2) for a couple of days. We have it for lunch and supper. Breakfast is eggs or porridge. It helps us get down the road and to work and back. During the Spring and summer I use veggies from the garden.

    For anyone wanting to make this in a slow cooker, one very important warning: do NOT try to cook kidney beans from raw in a slow cooker! They MUST be boiled for at least 10 minutes and slow cookers don't get hot enough to do that! Use canned, like Larry, or boil them on the stovetop first.
