    I love these budget meals, but I'm only one person. Do you have any tips for which meals can be frozen we'll? Or maybe a way to modify it (maybe refreeze before the eggs are set in muffin tins and reheat one day at a time?) To hold over better?

    wow! I can tell here in Fairbanks Alaska that bread is 2.50 or 3.00 a loaf. Eggs are 2.99 to 3.50 a dozen, shredded cheese is 3.00 a package and spinach in a can is 2.99 each:)

    The only change I would make is use frozen spinach. Just because we usually have it on hand. When it's just two of us, buying frozen veggies can be a money saver. Sometime we don't go through the fresh fast enough and end up throwing the stuff out. But frozen, lets us use just enough, and the rest stays in the freezer until needed.
