Easy Cheesy Beef Enchilada Casserole




The Wolfe Pit makes an Easy Cheesy Grilled Beef Enchilada Casserole. This is starts of by grilling a chuck roast until nicely charred for that wonderful grilled flavor, then braised in a homemade enchilada sauce until fork tender. The casserole is then built layer by layer with the shredded beef, Mexican cheese blend and corn tortillas, then baked until golden and bubbly.

    Instead of using corn starch, try stirring in a little masa flour to thicken your sauce. Adds tremendously too the flavor unlike corn starch which is neutral.

    Another thing I like doing helps tenderize the meat. Coat the roast with meat tenderizer and a bit of salt on both sides, then poke hell out of it with a fork to achieve good penetration into the muscle fiber. Again, both sides. Sprinkle on a tad more tenderizer, wrap in cellophane and leave it to sit at room temp all day. This allows the enzymes and salt to work their magic. Not to worry. The meat won't spoil because of the added salt. This method works really great for your common chuck roast recipe as well.

    Next, freeze the roast solid. This way when you put your roast onto the b-b-q, you can seer it too your hearts' content without fear of overcooking. Once that's done, I put a chunk of oak bark (or any good hardwood) on the coals, shut the Weber down and allow the meat to smoke for a bit just for that little extra goodness. Then proceed as normal.

    No, it's by no means a quick meal but any dish you put the extra time and love into will return that love back too you.

    just trying this and after an hour took a peek and my beef seems pretty tough…can I salvage? is my meat too small (haha) or will it eventually tenderize if I just let it sit? anyway smells great, added two fresh limes and some fresh garlic, peppers and onions, after reading the comments going to add black beans too! love the channel, keep up the great work!

    Im not very familiar with Mexican beer, would a regular beer work just as good? Or, if you have any suggestions..that would be great! This looks amazing! I have to try this while were still having cold weather in NC!
