Have you tried to thicken it with a roux rather than the slurry? I keep a lot of roux on hand in my refrigerator. I tend to prefer the taste a gravy made with roux more so than that of a slurry. Just curious if you've had it both ways and which way you think is better. That dish looks amazing by the way. Good Job.
I noticed you are using your cast iron on a glass cook top. I also have a glass cooktop range, and was told to never use cast iron on it, because it would ruin your cooktop. Have you seen any adverse affects using cast iron on your glass cooktop?

I'd throw a good dollop of horseradish right into the gravy. I love the stuff. Never thought of using soft drinks as a starter for gravy, but the results sure look good. That gravy looked excellent! But there wasn't enough on the plate. I could still see noodles. LOL
The food looks so good the paper plate threw me off .

Next time try real hard to use your fork properly to avoid pushing half of your noodles onto the table.

I am using oxtail that was in the crock over night as my beef…just cruising around looking for other ideas…horseradish is a new idea
