TheWolfePit, I followed this recipe exactly and it turned out terrible! Way too salty and over-seasoned, the rice was crunchy, it was a disaster. I wasted two pounds of chicken and 2 cups of rice on a horrible concoction. Maybe my crock pot cooks differently than yours. I don't know what happened but this was awful. Sorry.
this was great made it last night. everyone is fine w it being leftovers tonight since it makes a lot and theres only 4 of us (2 of them being children) thank you def making this more often. thank you. i used brown rice so thats one way to get everyone to eat healthy.
Larry, did I ever mention how much I like crock pot food?? The high temp in Minnesota today was -2. That looks like a great meal for a lazy shut in sunday dinner..very nice!!
I absolutely love my crockpot and am always looking for new recipes to try.. Will be making this during holidays as i have most of the ingredients in my pantry. Thanks for another wonderful recipe Larry!

That looks super delicious 🙂 I read through all the comments, and was wondering if you think it is possible to make this without a 'crock pot' i.e. could you make it in a stove top stew pot with very low heat? Also, thanks for the tip about using salsa as a cooking base! I'll have to try that instead of using diced tomatoes in my own recipes.
