This is by far the best way to do chicken thighs in my opinion. Also protip from the trade: If you're shopping at a store that has a on-site butcher (and you should be) we'll debone the chicken or any other prep work for you. Usually free of charge but I don't speak for all companies of course. Either way, one less step between you and dinner.

Super underrated channel. I’ve made loads of these recipes without the special barbecues and trust me, they still work in my experience.
Cutting by the top of the bone and scraping down the bone then removing the knuckle leaves alot more meat on the thigh rather than just cutting around the bone.
