    always worth it to air on the side of caution with seasonings, I watched a video a long time ago and the cook said "you can always season more at the plate because if you something goes wrong and you over season at the plate you only wasted one serving of food and not the entire meal".

    Bravo MR Robert, that was masterpiece theater there. Nothing wrong with a little seasoning up front to avoid darkening. Follow up with a little more seasoning at the end also to drive that flavor home.
