This takes chili and spaghetti to new levels. The mixture of Middle Eastern spices with the chili, over top of pasta with cheddar cheese and onions on it is spectacular!

I made a pot of Cincinnati-style chili last night. We fell in love with this dish when we lived near Cincy close to 40 years ago. Some recipes use chili powder, some don’t. Most include some unsweetened chocolate, about 1/2 ounce for a batch this size. Some recipes use tomato sauce, others call for tomato paste, some both, but never pieces of tomato. The other ingredient common to many recipes is allspice, along with the cinnamon and cloves. But the beef is never browned. Instead, you crumble raw, lean ground beef into a quart or so of boiling water and beat it with a fork or whisk to break it into the tiniest pieces possible. Beans are NEVER cooked into the chili. If desired, they are added as it is plated. This is also the world’s best hot dog chili.
when i was a tiny little kid, my uncle would make this and serve it over spaghetti noodles. I loved it, thought it was the best thing in the World! I would ask my mom to make it like my uncle but she made the usual tomato based sauce whenever I would ask her for it. Now I know, it was because he was making chili spaghetti, totally different.
You should buy a can of SKYLINE chili to see what it looks like and tastes like, Walmart sells it. They serve it with an enormous amount of finely shredded cheese as well. They you can try to replicate the real thing. Also you left out the chocolate. I like you channel a lot. Thanks for doing this.
Hey Larry, I know you posted this video 3 years ago, but since you live in the Northern VA area (I'm from Springfield and Alexandria), there's a local chain called "Hard Times Cafe" that makes awesome Cincinnati Chili (and even has boxes of spices you can buy to make your own). I haven't been around that area for a few years, but there used to be one in Springfield and one in Rockville. They make awesome burgers too!
Looks really good. Just like I remember it from back home, although we put way more chili and cheese on top of the spaghetti. Also, your camera was blurry for the middle part of the video.
Some people even put a little bit of chocolate in Cincinnati chili. Oh, and actually you put sugar in at the end, maybe that's where the chocolate is supposed to go instead?
OMG! I know! It drive me nuts to watch an awesome meal get dissected! You absolutely have to have mushrooms and onions in a beef & noodle casserole! The next time I'm up that way, I'll take you up on that and we can eat EVERYTHING all "those people" won't eat! lol! And SPICY, too! 🙂

Stick to your ribs goodness right there. I like the raw onion finish. Gives it that extra snap of flavor.

That wasn't even close. Try again and boil the ground meat. Use chocolate and cinnamon. Key spices.

You got pretty close on the spices. Congrats! At least you didn't add coco…. I have no idea why people think we add chocolate.

That isn't Cincinnati style chili….you don't brown the mean ….you put the meat in the water and cook it by boiling it….
