Oohhhh that looks good. I did your regular sauce with the butter and I didn't like the butter, I only usually use butter when making a rue, frying fish and making a pan sauce. Making gravy, or on my waffles. I don't use it on bread. I don't use it when I'm frying eggs. If I'm not making a pan sauce I don't use it for fish. Hell I don't use it when making grilled cheese or in my waffle batter. My eggs get cooked either in salsa or bacon fat. And I use coconut oil on my toast. Try it in waffle batter, it makes the waffles more crispy and you can tell it's not butter.

Sounds like a great sauce, but you literally would not be able to taste any of the honey.
interestingly my fav sauce for chicken I buy from the store. and it has tamarind in it. you do mention it's common but I have not seen it in store bought (which usually sucks anyways ). pc beer and chipotle. one of the only sauces I'll actually buy. and it holds up well with charcoal and smoking.
