you are really messing up that chicken, consider watching jaque peppin's method, mit maintains a lot more of the structure and requires significantly less work/cutting.

One thing I learned in school: powdered gelatine is good for making tears and rouge cuts in skin (the chicken not your own lol) bind.

The word is "Ballotine," not "Ballantine." You are conflating two related words: "Ballotine" and "Galantine."
Try resting the chicken in the freezer. Don't freeze just to hold shape then tempur…
Great de-boning demonstration, never have seen that…would have pounded thinner to make a larger role…would have tied the meat, instead of using aluminium foil, done you want a smoked bryd….would sear over open flames, wit additional wood….Great job chef, thank you for sharing
