So your running it with the whole diffuser removed and not just the firebox access panel?. I bought my Yoder from you guys but I’m always worried to use it for direct grilling. Afraid of all the oil and fats dripping into the fire box, thinking it will either be impossible to clean, damage the igniter rod, or cause a grease fire.

Very Interesting and looks very well worth the effort…I think a must try.
So, basically you could just make a stuffed flank steak after it was tenderized…cook it part ways, the. Cut it and finish it off as slices….would be much easier.
Hope you didn’t waste those cut-offs.
