Smoked cream cheese is the perfect appetizer to serve when you have friends over for a barbecue! This recipe is so easy to throw together, and everyone who’s tried it seems to love it! The cream cheese gets soft and gooey, but doesn’t fully melt, making for an incredible texture when you serve it fresh from the smoker. I typically serve it with a cheese knife and crackers (as a spread), or with plain kettle chips (as a dip).
My favorite thing about this smoked cream cheese is that it works well at a wide range of cooking temperatures, so I just throw it in my pellet grill with whatever meat I’m smoking. It also works great with pretty much any dry rub

💨Ingredients:
4 Large Jalapenos (Cored and Seeded)
1/2 Cup Shredded Cheese
8 oz Cream Cheese
1 lb Pork Sausage
1 tsp Garlic Powder

🔥 Pellet Smoker Setup: In this episode of Backyard Bosses, we’ll walk you through how to set up your pellet grill to make smoky and delicious Raptor Claws!
First, you’ll want to fill your hopper with a high-quality pellet blend. For this recipe, we recommend filling your hopper with Pit Boss Competition blend pellets! Our Competition blend will perfectly complement the flavors in this cook, and like all Pit Boss Pellets, our Competition blend is free from artificial binders, fillers, and flavor oils.
Next, you’ll want to ensure the top rack of your barrel smoker is installed. The top rack is great for cooking over consistent, indirect heat which is exactly what we want for this cook.
That’s it! Setting your Pit Boss up for this recipe is super easy!
👨🍳 Cooking Process: In this episode, we’ll show you exactly how to make smoky and delicious Raptor Claws on the Pit Boss Austin XL Onyx Edition!
First, core and seed your jalapenos using a paring knife or a coring tool! If you like it spicy, you can leave some of the seeds intact.
Once your jalapenos are cored and seeded, make the cream cheese filling! All you have to do is mix the cream cheese, shredded cheese, garlic powder, and Pit Boss Sweet Heat BBQ Rub in a medium bowl until the ingredients are well combined.
Then it’s time to build the Raptor Claws! Carefully stuff the jalapenos with the cream cheese mixture, and top each jalapeno with sausage before generously seasoning with Pit Boss Sweet Heat BBQ Rub.
🔥 Smoking Time & Temperature: Smoke at 350°F for about 45 minutes, or until you reach an internal temperature of 165°F. Once you reach 165°F, baste each Raptor Claw with BBQ Sauce, and cook for another 5 minutes.

Crispy hasselback potatoes are a great way to make a side dish standout. These are great potatoes to have with many different meals, steak, seafood, roasts and any type of BBQ food you can think of.
Hasselback potatoes originated in Sweden, and are perfected in my backyard. These potatoes are so addictive and when you learn to prep and cook them properly, you will be making them a lot, I can promise you that.
As with all my recipes I run through the selection, preparation, seasoning, BBQ set up, times and temps, so you can recreate this recipe at home.
Main Ingredients:
6 x potatoes
12 teaspoons of duck fat
1 teaspoon of salt flakes
Seasoning Ingredients:
100 grams of salted butter
1 teaspoon of dried rosemary
1 teaspoon of dried thyme
½ teaspoon of garlic powder
¼ teaspoon of black pepper
Garnish Ingredients:
1 tablespoon of freshly chopped chives
