I made this today using Heatonist's Los Calientes Barbacoa hot sauce as the binder for a sweet heat variant. I must say, it's pretty amazing.

Ixnay on the maple, but brown sugar would be acceptable. Plain old sugar would be my choice, heavy on the black pepper – maybe some cayenne, smoked paprika, and cinnamon.

Geat way to do the candied bacon, Chef Tom!! I use brown sugar and sprinkle Motley Que's Honey Habanero Seasoning over it. Its a thing of beauty!! Thanks for sharing this!!
That's the best stuff in the world the only other thing that's very comparable is if you're going to Candy pork belly but on my candied bacon after you get where you want your sweet I add chili flakes to mine want some yummy stuff that's it
