    How can that be delicious if you introduce so much bitterness from the burned potato pieces? That was not just charred, it was dry crusted burned bits… charcoal.

    Also the potatoes, onions and bellpeppers would probably turn out with a nicer browning if you cut them and then dried them out overnight in a fridge, the Binging with Babbish way… they seem far too moist when you put them on the grill/BBQ. that means it already takes a lot of heat to dry them out before it can start to brown and develop grilling flavors…

    I think some crumbled cheddar cheese would work instead of bacon for those who are so inclined. Definitely needs the spring onions right at the end though. I might be tempted to add chives if there is no bacon and no cheese.

    I agree, store bought potato salad is disgusting.. I think they make it that way on purpose.

    WHERE I LIVED BEFORE UP IN RIDGEWAY PA WE HAD A STORE CALLED BI-LO THAT MADE THEIR POTATO SALAD FRESH EVERYDAY AND IT WAS THE ONLY STORE BOUGHT POTATO SALAD EVER MADE. THEY MADE IT FRESH IN THE DELI EVERY MORNING.

    I have to agree on a couple things my friend, 99.99% of store bought potato salad is blah, BUT we have a local meat store that sells a Mustard Potato Salad that I could eat everyday.

    The other thing is after seeing you put that all together I have to agree some bacon would have been great in that, the only other thing after seeing it done and garnished would have been a good sprinkle of shredded cheddar cheese on top too. Other than that it looks delicious.

    This looks really good. I've had issues with making homemade Potato Salad. Easy enough to make, but not as flavorful as I want it to be. I've been liking red potatoes lately. So this seems like a good place to start and make a decent homemade potato salad. Thanks
