These inexpensive family meals are cool
There is a problem, however, in that they almost all have rice, macaroni, or beans in them which makes them a problem for diabetics.
Rice can be replaces by riced cauliflower, which I guess isn't too expensive.
Can you figure other ways out of the problem?

I grew up on this. Yum!!
In Texas at certain bbq place's they have something called loaded corn bread. Its better to me with regular non sweet corn bread. It has a big piece of corn bread as the base, topped with shredded smoked brisket with bbq sauce, jalapenos, chives, baked beans, shredded cheddar cheese. The reason i dont like the honey corn bread is because its to much sweetness for my liking in combination with the sauce. Also add diced onions. =)
Drain some fat …. then add butter!!!
I make this once a week but with ground turkey because it’s only 1.89 a pound at my local Aldi. So the whole meal comes out to be 5.50 for a big pot

This may be a dumb suggestion, but maybe a laser thermometer at times to give us ideas of the temps your cooking at? Some of us less culinarily inclined folks need to do stuff by the exacts to get it to turn out right, lol. Eyeballin it rarely works for me, but anal retentive following of steps does.

Lean ground beef doesn’t equal bland food! I like it because I get more bang for my buck, more meat and a lot less burn off. I may add butter or olive oil when fats are needed. Those taste better in the end product than beef fat imo.
I know you say not to be critical of portion sizes, but that's MAYBE 3 servings for an adult at $8.21 total… $2.70/ea. I meal prep more nutritious meals every week – I will concede they likely aren't as tasty because that looks damn good.

We got a Canadian version of this dish in my family called Swagger Special (named after great grand father). Very similar but made with tomato soup, frozen peas, corn onion, macaroni and beef with a few spices. Its funny to see the similarities between the two dishes being 1000's of kilometers apart. 3921 kms apart actually!
So whats the difference in goulash and chop suey then? Because they both seem the same. lol
Not sure where you grew up, but that was called ghoulish everywhere I've lived. Chopped suey is american asian.
Don't be afraid to make this with ground sausage instead!

I've made this dozens of times for church potluck dinners and for myself. I like using the Spicy Hot V8 juice in mine.
