Throw the meat in the freezer for a short while so it firm's up before you slice it .

Pro tip for people put it in the freezer for 30 minutes then slice it
I noticed that you didn't clean the habanero mash off your hand before
mixing in the other bowl . Still gonna get some sweet heat I would imagine ?
