Bulgogi is good but I don’t eat kimchi!

FYI, Kimchi goes perfectly well with pork(or lard) rather than beef. Try it with bacon.
Chef Tom, this is fantastic. We Koreans love kimchi fried in oil and a lot of our "fusion" recipes pair kimchi and cheese together. The slaw you made is reminiscent of a side dish (banchan) they give you at Korean bbqs. Always love your videos and am learning so much for when I move to someplace where I can grill and smoke some meat outdoors.

I'd add only 1 thing, not sure if I would do it on the top at the end or perhaps mix it into the funky slaw, but some Thai basil would work, don't you?

That bulgogi marinade was really missing the gochujang (fermented red chili paste) or at least some gochugaru (red chili powder). But that is just my opinion. It is made so many ways.
