I do not understand. Some of your video's state you separate the point and flat to cook. However twice your shows present the entire brisket with both pieces still together.

When do you wrap the brisket at the start or after a few hours?
05:02 I'd use butcher paper method; take out rest for 2 hours, then just before serving I place it in a searing hot smoker for 20 minutes.
