    We Jews love it. We call chicken bacon, schmaltz with gribenes. Render chicken fat with onions and schmear it on rye bread or make chopped liver with it. The best.

    Hey! so i do this sort of thing professionally…. if you take the chicken skin (or any poultry skin; duck is amazing) and place it on a baking sheet lined with parchment and cover it with another sheet of parchment and a similarly sized baking sheet to weigh it down it will make perfectly flat and amazing bacon (cracklins). give it a shot around 250 degrees and just check it every fifteen min. as long as its thin and golden brown it will firm up quickly on a paper or regular towel.

    Bless you sir! I'm on a low sodium diet due to a heart lung disease (Pulmonary Arterial Hypertension) and I MISS bacon! I do a lot of smoking (Mostly pork shoulders) and have considered trying to make my own bacons and hams with a sugar cure, but till I get the confidence to try that I can just try this omitting the salt in the seasoning. Bless you!

    On chicken legs I kinda like the skin on them when I smoke them.. I'll smoke some thighs tho and give the chicken skin bacon thing a try.. sounds good..thanks for the idea..

    can you do anything with the rendered chicken fat? like i have a jar of bacon fat in the fridge for when i fry eggs. maybe make dumplings or something with the chicken fat?

    I've been making pulled chicken like this since your original video, it's great, it's probably my favorite way to do chicken on the bbq. bone in skin on thighs are so cheap, and prepared this way incredibly delicious!

    My grandma used to do this. We called the fried chicken skins "cracklins". Just like pork "cracklins". I think that was about a hundred years ago…or close to it. Loved the whole concept and those chicken cracklins brought back a flood of memories. Might be time to bring those back in to my life! Many thanks Larry for a great recipe.
