145(f) produces best taste, but man I worry sometimes about Trichinosis which doesn't die unless an internal temp of 165(f).

I use half inch sirloin porkchops, I put them in a pan with warm water to defrost and also soak in sole water, put them in a bowl and pour out excess water then let them marinate for 20min while getting the grill started, sear 2 min then off the coals and turn them everytime u take off the others off the coals. Keep them medium and they come out just as moist and tasty. Never gets dry

Key to gravy is it should coat a spoon when dipped… I think it looked good.

Looks great! I only have a gas grill, since you aren't allowed to use coal grills on the balconies in my apartment building, so it's not easy to smoke stuff.
Btw, about that t-shirt your friend is wearing, here in Norway therapy is cheap because of socialized medicine, but beer is really expensive because of alcohol tax, expensive logistics etc. Kinda funny how it's the opposite 🙂
