Is that anything with a substantial amount of fat / marbling? Like, why would I not do a steak to 205?

I smoked my first belly a few weeks ago. No one in my family likes fatty juicy meat, pork or beef. So, ……. I ate the entire thing. It wasn't even a half belly, but it was a lot … way more than normal people consider a portion, lol. My wife just shook her head …. 🤣

Pork belly is one of my favorite and most controversial foods. I can never decide if I want to turn it into bacon or burnt ends? It's a good problem to have.

Keep comming with pork belly recipes!… this looks really great. Pork Belly is trully one of the greatest pieces of meat ever. It is hard to make it bad. It is like a delicious canvas! You can make it salty, sweet, braised, smoked , fried!.. the sky is the limit.
