Chef Tom fires up the Yoder Smokers YS640s Pellet Grill for Barbecue Dove Poppers! Jalapeños stuffed full of smoked cream cheese, gouda and honey are topped with wild dove breasts and wrapped in bacon before getting a little char on the grill and a sweet barbecue sauce glaze!

    If you divided the cream cheese block into quarters or 16ths before smoking would it increase the smoke flavour or just dissolve into goo? Always looking for ways to increase the smoke ratio. Thanks for being awesome chef Tom 🙂

    My sweet little daddy 😇 used to make this. 2 dove breasts with a sliver of jalapeño and a sliver of cream cheese between them. Wrapped in bacon and spritzed periodically on the grill with 1 part brown sugar and 1 part apple cider vinegar. Yummo!!

    I put mine in the freezer. Just long enough that the inside is set and the outside is not quite frozen. It works well. I also use the cheese side down first cooking method. If I get thick cut bacon I stretch it thin with my hands and it works well

    Dude! I've been a fan for a while and so glad to see the wild game post. I've been doing dove and duck for years, my fav is gyros with a homemade tzatziki but you can't go wrong with poppers!

    Any recipe ideas using snapping turtle? Growing up my Grandma had a recipe that was similar to pulled pork or shredded turkey. slow cooked with a gravy, We ate it like a hot turkey sandwich! It was amazing.

    About 10 years ago I was at a bachelor party weekend and most of the guys there were hunters. The first night one of the guys made a very similar recipe but with duck breasts instead of the dove. It was such an awesome appetizer that we decided to skip dinner and just keep making more duck poppers. I swear every guy there had at least 15-20. Absolutely amazing!

    Brings back very fond memories. We were lucky to have plenty of dove and occasionally quail in our 3 acre yard in rural Tx. Could pop em from the back porch and have the smoker going in no time
