If you divided the cream cheese block into quarters or 16ths before smoking would it increase the smoke flavour or just dissolve into goo? Always looking for ways to increase the smoke ratio. Thanks for being awesome chef Tom 🙂
Just make head shots and you won't have that problem, let me know how that works out for you. Great looking appetizer, your skills never cease to amaze.
My sweet little daddy 😇 used to make this. 2 dove breasts with a sliver of jalapeño and a sliver of cream cheese between them. Wrapped in bacon and spritzed periodically on the grill with 1 part brown sugar and 1 part apple cider vinegar. Yummo!!
I put mine in the freezer. Just long enough that the inside is set and the outside is not quite frozen. It works well. I also use the cheese side down first cooking method. If I get thick cut bacon I stretch it thin with my hands and it works well
Dude! I've been a fan for a while and so glad to see the wild game post. I've been doing dove and duck for years, my fav is gyros with a homemade tzatziki but you can't go wrong with poppers!
Any recipe ideas using snapping turtle? Growing up my Grandma had a recipe that was similar to pulled pork or shredded turkey. slow cooked with a gravy, We ate it like a hot turkey sandwich! It was amazing.
Love that you're doing a hunters recipe with a tasty piece of game. Another good recipe is plucked and fried dove.
Chef Tom is the sh%t!
I love experimenting with pepper popper recipes, but this I wouldn't have dreamed up. Now let's see if I can catch that dove that has been picking at my peppers for some culinary revenge.
I'd love to see you make a smoked hot sauce. Bonus points if it's an actual fermentation.
Thanks Chef. I’d love to try this with Kangaroo. It’ll need to be super thin cut but I think it’s a goer. Thank you. ❤
I would love to try dove but I don't know anyone that hunts dove in Massachusetts
Love it
I've suggested this many times. I marinate the dove breasts in Italian dressing overnight.
Uh eww
About 10 years ago I was at a bachelor party weekend and most of the guys there were hunters. The first night one of the guys made a very similar recipe but with duck breasts instead of the dove. It was such an awesome appetizer that we decided to skip dinner and just keep making more duck poppers. I swear every guy there had at least 15-20. Absolutely amazing!
Chef do we have to use duck breast is there another kind of meat 🍖 ducks in Cali are gangster lol
Great video 👍🏾✌🏾🙏🏾
You should do olive branch smoked dove breast for easter
hmmmmmmmmmm
Brings back very fond memories. We were lucky to have plenty of dove and occasionally quail in our 3 acre yard in rural Tx. Could pop em from the back porch and have the smoker going in no time
Chef Tom! Man that looks jam up! Love all your stuff. Would you try throwing in a little more wild game in your videos? Just a though man. Keep up the great content!
