Thank You! It's just me here and a whole brisket is too much food. Even if I freeze leftovers, my freezer is packed. A 3-4lb chuck is my goto for beef sandwiches.

I’m curious why you cooked these at the higher temps but added the Smoke tube to get more smoke flavor? Why not just cook them at 225??

Can a rump roast be used instead of a chuck roast? Not sure of the difference in roasts. Just asking because I have a rump roast in the freezer leftover from 1/2 cow.

Chuck is about the same as anything else now. They have taken everything that is affordable and raised it's price as well

Your sauce is similar to Arthur Bryant's original. Some people don't care for the heavy vinegar base but I prefer it. A lot of the Kansas City sauces are too sweet for my taste. Great looking flavors Chef Tom.
