I was thinking about making a de-boned turkey this thanksgiving, but now I'm thinking about making this instead. That looked incredible, but I think I'll be using apple juice in my brine rather than a lemon base….. Good stuff man! Cheers!

hey chef tom, can the brine liquid be used for anything afterwards? i.e bring it to a boil to kill off the bacteria and make a slurry to thicken it?
