I tried this recipe with a couple of twists…I had pepper bacon to use up, so I used 12 oz pepper bacon with 2 russet potatoes, and I used about 6 slices of regular bacon on one sweet potato (prepped the same way).  After indirect cooking/crisping on the grill for about 30-45 minutes, I then hit them with an Expresso BBQ sauce (looking for the right recipe) I had in my pantry, and they came out excellent.  Easy recipe, crowd favorite, kids and adults loved them!
