HOW TO ARMADILLO EGGS ON THE BBQ
______________________________________________________________
WHAT YOU WILL NEED:
– 2 lbs sausage
– 1 cup cheddar cheese
– 1 block of cream cheese
– 6 Jalapenos
– BBQ Rub of your choice
– BBQ Sauce of your choice
**PROTIP : With your leftover filling, you can melt it down for a chip dip.**
STEP #1
To prepare our Armadillo Eggs, cut the stem off your jalapenos and remove the seeds from the inside.
SETP #2
Mix together your filling by combining your cream cheese, cheddar cheese and BBQ rub together well. Once mixed begin to fill the jalapenos with the filling making sure to “burp” the air pockets out as you fill it so that you can get as much in as possible.
STEP #3
Next, take your sausage meat and begin to cover the outside of the jalapeno completely. Once it has been fully covered apply your favourite BBQ rub to the outside for added flavour.
STEP #4
Set up your grill for cooking indirect at around 275F. Once up to temperature, place the armadillo eggs on the grill opposite the coals and add in your favourite hardwood for smoking. Cook until the internal temperature reaches around 150F then sauce. Continue cooking until your armadillo eggs are around 165. We cooked ours to 163 then let it rest up to around 165F.
Slice and enjoy.

Looks great Jabin. What I've done in the past is to nuke the cleaned peppers briefly, just to get them started cooking. That way, by the time the IT gets to 165*, the peppers are tender and easier to slice, or just take a bite of.
