Cordless leaf blower does a good job of "turbo starting" my charcoal. Keep the throttle on the low side to avoid moving things around too much.
I like using some race gas or if I don't have that.. some good ole 93.
Starts fast under any conditions ?
Delicious
8:59. You know you were waiting for it!
I totally understand promoting KJs mediocre lump, but you lost me when you said you had completely white ashed over coals in 12mins ?
Big Bold Flavors!! Drink!!!
I’m torn. I currently use a gas vertical smoker and gas grill with good success. I like that when I start it it is ready to go more or less immediately. I’ve been tempted by the pellet grills like the YS640-S that chef Tom uses so much but I’m worried that when the electronics fail I’ll be left with a big and expensive yard decoration. Videos like these are making me come around to the idea that using charcoal doesn’t mean cooking has to be an all day adventure.
I’m a fairly new KJ owner. I got a Joe Jr. in early June 2021 and a Big Joe in early September. I have gotten some good results but have a LOT more to learn. A “fundamentals” video like this is huge for me because it’s a skill I can use across many recipes. I would love to see more! I’m a dedicated follower of the Kamado Joe channel and Eric’s great videos. I’m a dedicated follower of the ATBBQ channel too. I hope Tom picks the KJ more often for his videos.
Killing it?
Love this! That steak to me just screams Fajitas!!! Perfectly done, Chef Eric! Thanks a bunch for sharing this!
Want to get them hot even faster? Use a weed torch to light them. Super fast
Never had a problem building heat and never had to do any of this.
This is a lesson I have to constantly remind myself of; more is not always better in a kamado. Thanks Chef!
nice!
The BBQ Dream Team at the start and I really appreciate the fact that Chef Eric can be seen here regularly again. Btw, the flank steak looks amazing ???
Big Block charcoal from KJ is absolutely the best. It was the first one I used and once it was out I thought I would shop around and see some of the alternative choices….nothing came close!
Great info, and another great recipe! Thank you Chef Eric.
Fajita time! I would need to put the other half of the cast-iron grate on for warming the flour tortillas!!!! Add some pico and maybe avocado. Maybe make some chilli con queso go with it all! Nice Tex-Mex meal!

Chef Eric, killing it every time! Convenient that this video just dropped as I picked up a flank steak last night. ???
Good job, Gephart, you made a nice steak again! can you work with Chef Britt please? I wanna see the Kamado Joe being utilized for baking too. I also miss Chef Britt, I hope she's doing well.
Thanks
THIS IS EXACTLY HOW I LOVE MY STEAKS JUST LIKE THAT PUT THAT IN A TORTILLA AND SALSA BOMB! THANK YOU MY BROTHER
