    I love fritata's because you basically put in whatever you want, cover it in eggs and bake it. We grew up on whatever leftovers we have throw it in, great way to make sure you never waste any food.

    Poor people don't have left over meat. Leave out the cheese to make it less expensive? That would be the same with the rest of the ingredients. Fine looking breakfast. Thank You.

    I make one just about like this. An easier way to do this is to either boil potatoes beforehand or nuke them, cut them up and just simply toss into the sausage and pepper and onion mix while it’s cooking.

    I frequently use leftover and leftover take out in frittatas. If you’ve got fries or some cooked chicken leftover it works amazing.

    I feel bad that Larry STILL has to explain the concept of these videos to people. Just because you are able to afford/eat bigger portions, doesn't mean others are as fortunate. Some people, myself included, are happy to even have a plate of food, be in small or big, in front of them.

    So I was bored and ran some numbers on the nutrition just for fun. With 8 servings, per 1 serving is 390 calories, 12.8g carbs(13%), 27.2g fat(62%), and 23.9g protein(25%). Its definitely fat heavy, but in my experience most budget meals are, as fat is cheap and high in calories to keep you alive. Great vid, thanks.

    Funny, I whipped up a recipe like this, but I cook it in a different order. Biggest change I would suggest to some people, I go to the grocery store near the end of the day when some items go to sale and I get Mushroom and Cauliflower, and I substitute part of the sausage for Mushroom, and part of the potato for Cauliflower to make it a bit more rounded and healthy, but cauliflower can be expensive in some areas… I can get half a pound of mushroom for about .50cents or so.

    I did this after my old favorite of Corned Beef and hash with eggs became too expensive and too unhealthy to treat as a breakfast.
